Pumpkin Protein Muffins

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup protein powder
  • 1 cup oats
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, protein powder, oats, almond milk, honey, baking powder, cinnamon, nutmeg, and salt.
  3. If using, fold in walnuts.
  4. Pour the mixture into a greased muffin tin.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
