  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 3 ¼ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the pumpkin puree and eggs, mixing until well combined.
  4. In another bowl, whisk together the flour, cream of tartar, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  7. Sprinkle with additional cinnamon sugar before baking.
  8. Bake for 10-12 minutes or until golden.
  9. Allow to cool on the sheets for a few minutes before transferring to wire racks.

Notes

  • For enhanced flavor, refrigerate the dough for 30 minutes before baking.
