  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 2 tablespoons cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 package cream cheese (8 oz)
  • ½ cup powdered sugar
  • 1 teaspoon lemon juice
  • 2 cups heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine all-purpose flour, cocoa powder, and salt.
  3. In another bowl, mix sugar, vegetable oil, buttermilk, eggs, red food coloring, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into prepared baking pans and bake for 25-30 minutes.
  6. While the cake cools, prepare the cheesecake by beating cream cheese with powdered sugar and lemon juice until smooth.
  7. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  8. Once the cakes have cooled, layer the red velvet cakes with the cheesecake filling in between.
  9. Finish with whipped cream on top and decorate as desired.

Notes

  • For a deeper red color, add more food coloring.
  • Allow the cake to set in the refrigerator for a few hours before serving for best results.
