  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, combine lentils and vegetable broth; bring to a boil.
  3. Reduce heat and let simmer for about 20 minutes or until lentils are tender.
  4. In a pan, sauté onion and garlic until translucent.
  5. Add bell pepper and spices, cooking until softened.
  6. Mix the sautéed vegetables with the cooked lentils.
  7. Season with salt and pepper to taste.
