  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, mix together the canned pumpkin, sugars, oil, eggs, and vanilla until smooth.
  3. In another bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Pour half of the batter into each loaf pan, then sprinkle with a cinnamon sugar mixture, and top with the remaining batter.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow to cool before removing from pans.
