Simply Pumpkin Muffins

These Simply Pumpkin Muffins are the perfect treat for fall. They’re easy to make, moist, and packed with pumpkin flavor.

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in walnuts if using.
  5. Pour the batter into the muffin tin and fill each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let cool before serving.

Notes

  • Try adding chocolate chips for a sweeter variation.
  • These muffins freeze well; store them in an airtight container.
