Smashed Potatoes with Garlic and Herbs

Delicious smashed potatoes infused with garlic and fresh herbs, complemented by crispy turkey bacon.

Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 cloves garlic
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them steam dry for a few minutes.
  4. On a baking sheet, place the potatoes and gently smash them with the bottom of a glass.
  5. In a bowl, mix together the olive oil, garlic, salt, and pepper, then drizzle over the smashed potatoes.
  6. Bake for about 25-30 minutes until golden and crispy.
  7. Remove from oven and sprinkle with fresh herbs and turkey bacon before serving.

Notes

  • To add more flavor, consider roasting the garlic before mixing it with the oil.
  • Feel free to substitute the herbs based on your preference.
