Smoked Gouda Broccoli Soup

  • 4 cups chicken broth
  • 1 cup smoked gouda cheese, shredded
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices turkey bacon, cooked and crumbled

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until onion is translucent.
  3. Stir in broccoli florets and cook for a few minutes.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer until broccoli is tender.
  5. Use an immersion blender to purée the soup until smooth.
  6. Stir in heavy cream and shredded smoked gouda cheese. Mix until cheese is melted.
  7. Add salt, pepper, and crumbled turkey bacon. Serve hot.
