Snickerdoodle Pumpkin Bread

A deliciously spiced pumpkin bread topped with a cinnamon-sugar swirl, perfect for fall.

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 cup canned pumpkin puree
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, mix flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine pumpkin, sugars, oil, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Pour half the batter into the prepared pan, then sprinkle half of the cinnamon-sugar mixture.
  6. Add the remaining batter and sprinkle with the remaining cinnamon-sugar.
  7. Bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Let cool before slicing.

Notes

  • For best flavor, let the bread sit overnight before slicing.
