- 2 loaves of French bread
- 1 pound flank steak
- 2 cups corn, fresh or frozen
- 1 tablespoon mayonnaise
- 1 tablespoon sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon lime juice
- 1/4 cup cilantro, chopped
- 1 cup queso fresco, crumbled
- 1 jalapeño, sliced
- Preheat your grill to medium-high heat.
- Season the flank steak with salt and pepper, and grill for about 7 minutes on each side, or until desired doneness.
- Let the steak rest before slicing it thinly.
- In a bowl, mix the corn with mayonnaise, sour cream, chili powder, lime juice, and cilantro.
- Cut the French bread loaves in half and hollow out a bit of the center.
- Layer the sliced steak and corn mixture into the bread halves.
- Top with queso fresco and jalapeño slices.
- Return to the grill for a few minutes until the cheese is melted.
