  • 1 cup corn, frozen or fresh
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them in olive oil, chili powder, cumin, and garlic powder.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25 minutes, or until tender.
  4. In a bowl, combine the black beans, corn, avocado, cilantro, and lime juice.
