  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon coffee powder
  • 2 tablespoons cocoa powder
  • 1/4 cup mascarpone cheese

Instructions

  1. In a bowl, combine chia seeds, almond milk, maple syrup, vanilla extract, coffee powder, and cocoa powder. Mix well.
  2. Let the mixture sit for 10-15 minutes until it thickens, stirring occasionally.
  3. Once thickened, layer the chia pudding in serving cups with mascarpone cheese.
  4. Refrigerate for at least 2 hours before serving.
