- 1 cup brown rice
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 cup corn, frozen or fresh
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 large whole wheat tortillas
- Cook the brown rice according to package instructions.
- In a large bowl, combine the cooked rice, black beans, diced bell pepper, corn, lime juice, cumin, and chili powder. Mix well.
- Warm the tortillas in a pan or microwave.
- To assemble, place a generous amount of filling in the center of each tortilla and top with avocado slices.
- Fold in the sides and roll up the tortilla tightly.
- Serve immediately or wrap in foil for later.
