Vegan Burrito Wraps

Delicious and easy-to-make vegan burrito wraps that everyone will love.

Ingredients

  • 1 cup brown rice
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup corn, frozen or fresh
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 large whole wheat tortillas

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a large bowl, combine the cooked rice, black beans, diced bell pepper, corn, lime juice, cumin, and chili powder. Mix well.
  3. Warm the tortillas in a pan or microwave.
  4. To assemble, place a generous amount of filling in the center of each tortilla and top with avocado slices.
  5. Fold in the sides and roll up the tortilla tightly.
  6. Serve immediately or wrap in foil for later.

  • These wraps can be made ahead of time and stored in the fridge.
