  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups vegetable broth
  • 2 cups potatoes, cubed
  • 1 cup green peas
  • 1 cup corn
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
  2. Add the garlic, thyme, and rosemary, stirring to combine.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the potatoes and cook until tender, about 15 minutes.
  5. Stir in the green peas, corn, and heavy cream. Cook for an additional 5 minutes.
  6. Season with salt and pepper, then stir in fresh parsley before serving.

Notes

  • For a thicker soup, you can mash some of the potatoes with a fork.
