Venezuelan Sweet Corn Cachapas

  • 2 cups fresh corn kernels
  • 1/2 cup corn flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a blender, combine fresh corn, corn flour, salt, sugar, milk, and melted butter. Blend until smooth.
  2. Preheat a skillet over medium heat and grease lightly.
  3. Pour about 1/2 cup of the batter into the skillet for each cachapa.
  4. Cook until bubbles form on the surface, then flip and cook for an additional 3-4 minutes until golden brown.
  5. Serve warm, topped with cheese or your favorite toppings.

  • For a sweeter flavor, adjust the sugar to taste.
