Wild Mushroom, Caramelized Onion and Kale Soup

Ingredients

  • 2 cups wild mushrooms, chopped
  • 1 large onion, sliced
  • 4 cups kale, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and cook until caramelized, about 15 minutes.
  3. Stir in the garlic and thyme, cooking for an additional minute.
  4. Add the mushrooms and cook until soft.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the kale and season with salt and pepper.
  7. Simmer for 10 minutes or until the kale is tender.
